myFOXDetroit.com Staff - Some Royal Oak businesses are preparing for a Labor Day Rush and they couldn't be more excited about it.
Royal Oak will set the scene for this weekend's Ford Arts, Beats and Eats. One of the many restaurants taking part is Cafe Muse.
Cafe Muse co-owner and Chef Greg Reyner gave the Fox 2 morning crew a sample of one of the dishes people will be able to taste. He made their popular and tasty chicken salad.
Café Muse Chicken Salad
1 ½ pound chicken breast
1 teaspoon garam masala
½ cup dried Michigan cherries
½ cup walnuts
½ cup mayonnaise
Sea Salt and Freshly Ground Pepper to taste
Sliced Cheddar Cheese
Mixed Greens
Sliced Tomatos
12 slices of bread
Place raw chicken in a baking dish- large enough for 1 layer. Sprinkle with garam masala, salt and pepper. Cover tightly with aluminum foil and bake at 350 degrees for about 40 minutes. Make sure chicken reaches 165 degrees. Reserve the juice and chill all.
Once chilled, tear breast into small pieces and pulse in a food processor until desired consistency.
In a mixing bowl combine chicken, cherries, walnuts, mayonnaise and reserved chicken juice. Season with salt if needed.
Assemble sandwiches with bread, sliced tomatoes, greens, cheddar slices and chicken salad.
Makes about 6 sandwiches
