Simply Suzanne's Granola Recipes

(WJBK) - Check out these three ways to use Michigan-based Simply Suzanne Granola.

Simply Suzanne Original Granola Parfait

Ingredients
2 cups plain non-fat greek yogurt (or your favorite yogurt)
2 cups of Simply Suzanne Original granola
1 cup fresh berries (raspberries, blueberries, strawberries blackberries). Rinse and keep whole except for strawberries, which should be hulled and halved.
1 tablespoon pure Michigan honey.
Mint (for garnish).

Directions
Set out 4 clear glasses (parfait, wine, or martini styles). Spoon 2 tablespoons of yogurt into each glass. Add honey (to taste).Spoon 2 tablespoons of Simply Suzanne Original granola on top.Spoon 1 tablespoon of fresh fruit on top.Repeat the layering process until the glass is full. Add a sprig of mint for garnish.

Prep time: 5 minutes
Serves: 4

Note: Use fruit that is fresh and in-season. Serve as a breakfast, brunch, snack or dessert

Simply Suzanne Michigan Spinach Salad

Ingredients·
8 cups baby spinach (or mixed greens)
½ cup Simply Suzanne So Very Cherry granola (or to taste)
10 tablespoons pecans or 10 tablespoons walnuts, roughly chopped
12 grape tomatoes or 2 small tomatoes, quartered
8 tablespoons blue cheese, crumbled (or to taste)
Salt (to taste)
Black pepper (to taste)
Honey Mustard vinaigrette dressing (recipe separate)

Directions
Prep Time: 10 min.Total Time: 10 min.1. Place the baby spinach or greens in a bowl or dish. Add salt and pepper to greens and toss.2. Sprinkle remaining ingredients over the greens.3. Add vinaigrette. Toss lightly and serve.

Note: The addition of the So Very Cherry granola replaces croutons and provides a healthier substitute with the fiber, anti-oxidants, and iron found in the sweet and savory spice mixture in the granola

Simply Suzannes Midnight Hour Cocktail

Ingredients
¾ oz. Kahlua
¾ oz. Courvoisier VSOP
¾ oz. Grand Marnier
¾ oz. Fresh Espresso
Topped with thin layer of whipped cream

Directions
Put all ingredients into a cocktail shaker and stir. Strain into cocktail glass. Then, slowing strain the loose whipped cream on top of the chilled liquor. You can use a spoon to help layer the cream on top of the cocktail. Top the cocktail of the granola of your choosing.
