Ale Braised Beef Short Ribs

Get this recipe courtesy of Chef Franz-Josef Zimmer, Executive Chef at the Marriott Detroit at the Renaissance Center.

Serves 10

Ingredients:

  • 5 lb. Beef Short Ribs
  • 2 tsp. Kosher Salt
  • ½ tsp. Ground black pepper
  • 1 oz. Canola oil
  • 1 cup Celery - diced medium
  • ½ cup Carrots - diced medium
  • ½ cup Onion - diced medium
  • ½ cup Fennel bulb - diced medium
  • 2 oz. Molasses
  • ½ cup Honey
  • 2 bottles Ale

Procedure:

  1. Season ribs with salt and pepper.
  2. Place large oven-proof pan over high heat.
  3. Add canola oil and sear ribs on all sides.
  4. Remove ribs from pan.
  5. Add vegetables, cooking until caramelization begins.
  6. Add ribs back to pan along with all liquids.
  7. Cover and place in 350 F degrees oven for 2 hours.
  8. After 2 hours, turn heat down to 300 F degrees and cook for 2 more hours.
  9. Remove from oven, remove ribs from liquid and strain and serve.
