Serves 10
Ingredients:
- 5 lb. Beef Short Ribs
- 2 tsp. Kosher Salt
- ½ tsp. Ground black pepper
- 1 oz. Canola oil
- 1 cup Celery - diced medium
- ½ cup Carrots - diced medium
- ½ cup Onion - diced medium
- ½ cup Fennel bulb - diced medium
- 2 oz. Molasses
- ½ cup Honey
- 2 bottles Ale
Procedure:
- Season ribs with salt and pepper.
- Place large oven-proof pan over high heat.
- Add canola oil and sear ribs on all sides.
- Remove ribs from pan.
- Add vegetables, cooking until caramelization begins.
- Add ribs back to pan along with all liquids.
- Cover and place in 350 F degrees oven for 2 hours.
- After 2 hours, turn heat down to 300 F degrees and cook for 2 more hours.
- Remove from oven, remove ribs from liquid and strain and serve.
