Braised Buffalo Short Rib

(WJBK) - Get this recipe courtesy of Big Rock Chophouse in Birmingham.

Ingredients:

  • 4- 16 oz. Buffalo Short Rib
  • 1 oz. Bacon Fat
  • Salt and Pepper
  • 1 c. Red Wine
  • 1 c. Port wine
  • 1 c veal stock
  • 2 carrot rough cut
  • 1 onion rough cut
  • 2 celery rough cut
  • Bay leaf

Method:
In a heavy pan heat bacon fat until pan starts to smoke. Season the meat with salt and pepper, sear in hot pan on all sides, remove. In the same pan add all vegetables and caramelize, about 5 minutes. Deglaze the pan with the wine, reduce the liquid in half then add stock and meat back into pan, add bay leaf. Bring to a boil, cover and braise in a 350 oven for about 3 hours.
