Tuscan Style Steak with Sauce Ammoglio
• 2 inch cut Steak – (Café Muse prefers Rib Eye or Porterhouse)
• Course Sea Salt
• Freshly Cracked Pepper
• Extra Virgin Olive Oil
• Sauce Ammoglio
1. Allow the steak to come to room temperature - about 1 hour.
2. Season the steak well with salt and pepper.
3. Pre-heat oven to 450 degrees. Pre-heat a cast iron skillet until smoking with a little olive oil. Warning- turn on the exhaust fan or open the window as the steak will spit and smoke when you put it in the cast iron pan.
4. With tongs, place steak in center of the pan and cook for about 4 minutes.
5. Flip steak and place it in the oven for 5 to 6 minutes.
6. Remove from oven and allow it to rest for about 5 minutes.
7. Carve and serve with the Sauce Ammoglio
Ammoglio Sauce
• 2-3 Tomatoes, seeded and roughly chopped
• 2 Garlic Cloves
• ¼ cup fresh Basil
• 1 teaspoon freshly cracked Pepper
• 1 tablespoon Olive Oil
• ½ teaspoon Salt
• 2 tablespoons Balsamic
1. In a small food processor pulse garlic and salt together until it is almost a liquid.
2. Add basil and peppercorns and continue to pulse.
3. Add tomatoes and pulse until desired consistency.
4. Stir in balsamic.
