BBQ Ribs:

Do you want to make the best ribs in town. If you do, you must remember that you have to cook your ribs “low and slow”. That’s cooking them at a low temperature for a longer period of time. I normally cook my ribs at a temperature of 225 for 21/2 to 4 hours depending on the number of ribs I am cooking. The best way to determine your cook time is for you to cook your ribs and determine how long it takes on your grill. Remember …….. they are done when they are done. Don’t rush the ribs.

Now for the grill ………. Never use a gas grill if you want that rich smokey flavor and taste on your ribs. You must cook with wood and charcoal.
Never cook your ribs on direct heat. You must cook your ribs on indirect heat to be able to cook your ribs the length of time needed to get them tender and falling off the bone. For indirect heat I suggest you put charcoal on half of your grill and cook your ribs on the other half without the coals.

If you have a “Weber” type of grill it is important get the temperature right and keep the top closed. Don’t peek !!!! You must have patience to get your ribs right.

BBQ Rib Rub:

1 Cups White Sugar
1 Cups Salt
1 Cups Paprika ( or Ancho Pepper)
1 Cups Chili Powder
1/4 Cup Accent
1/4 Cup Black Pepper
1/4 Cup Onion Powder
1/4 Cup Garlic
2 Tbl Cayenne Pepper
1/4 Cup Thyme
1/4 Cup Cumin
2 Tbl Ground Cinnamon
