(WJBK) - Get this recipe courtesy of Samira Cholagh and her book A Baking Journey .

Makes 36 cookies

Ingredients:

  • ½ cup (1 stick) unsalted butter
  • ¾ cup brown sugar
  • 1/3 cup light corn syrup
  • ¼ teaspoon salt
  • 1 cup rolled oats
  • ¼ cup all-purpose flour
  • 2 teaspoons vanilla extract
  • 1 cup mixed nuts (walnuts, pecans, almonds, pistachios), chopped

Method:

  1. Preheat oven to 375 F. Melt butter in a heavy saucepan over medium heat.
  2. Stir in sugar, corn syrup, and salt. Lower the heat and simmer for 2 minutes. Remove saucepan from heat. Stir in oats, flour, and vanilla until well blended. Fold in mixed nuts.
  3. Drop teaspoonfuls of mixture on baking sheet lined with parchment paper, spaced 4 inches apart.
  4. Bake for 6-8 minutes, or until golden brown. Cool on baking sheet for 10 minutes. Transfer to a wire rack to cool completely.
