Makes 36 cookies
Ingredients:
- ½ cup (1 stick) unsalted butter
- ¾ cup brown sugar
- 1/3 cup light corn syrup
- ¼ teaspoon salt
- 1 cup rolled oats
- ¼ cup all-purpose flour
- 2 teaspoons vanilla extract
- 1 cup mixed nuts (walnuts, pecans, almonds, pistachios), chopped
Method:
- Preheat oven to 375 F. Melt butter in a heavy saucepan over medium heat.
- Stir in sugar, corn syrup, and salt. Lower the heat and simmer for 2 minutes. Remove saucepan from heat. Stir in oats, flour, and vanilla until well blended. Fold in mixed nuts.
- Drop teaspoonfuls of mixture on baking sheet lined with parchment paper, spaced 4 inches apart.
- Bake for 6-8 minutes, or until golden brown. Cool on baking sheet for 10 minutes. Transfer to a wire rack to cool completely.
