NORTHVILLE, Mich. - Chef Richard Lamoureux of Wynwood Northville joins FOX 2 to prepare an orange ginger salmon with peach salsa. Chef Lamoureux of Brookdale Senior Living community has earned the regional culinary honor of 2010 for participating in the Ultimate Chef of America .
Recipe:
ORANGE GINGER SALMON:
Ingredients:
Salmon Fillet, Skinned (2.5 lb)
Orange Juice (1 cup)
Olive Oil (1.5 TBSP)
Soy Sauce, Low Sodium (1/4 cup)
Honey (3 TBSP)
White Wine (1/4 cup)
Ginger, minced
Instructions:
1. Cut salmon into 8 oz. portions
2. Combine orange juice, olive oil, soy sauce, honey, wine & ginger
3. Place the salmon in bowl and cover with mixture
4. Marinate for 1 to 2 hours - Turn the salmon once. Hold at 40F or below
5. Preheat the grill, remove salmon from the marinate.
6. Place on the grill side up. Grill approx. 4-5 minutes each side.
7. Heat to an internal temp. of 145F
8. Top with 1/4 cup peach salsa (see recipe below)
PEACH SALSA:
Ingredients:
Peaches, pealed and diced (4 each)
Red pepper, diced (1/4 cup)
Limes (juice from two limes 2 each)
Cilantro, chopped (1/4 cup)
Red onion, diced fine (2 TBSP)
Garlic, chopped (1 TBSP)
Jalapeno pepper, diced (1 TBSP)
Banana peppers, diced (2 TBSP)
Instructions:
1. Combine all ingredients
2. Let stand for 1/2 hour. Hold at 40F or below
3. Serve 1/4 cup with each entree
