Spinach Pie - Spanakopita

Ingredients:
2 packages frozen spinach,thawed and drained well
1 bunch green onions,washed and chopped
1 lb/Greek feta,crumbled
2 cups small curd cottage cheese
1/2 cup fresh grated Romano cheese
8 oz cream cheese
1 Tb fresh parsley,chopped fine
1 Tb fresh mint,chopped fine
1 Tb fresh dill, chopped fine
Salt & Pepper
6 eggs beaten
1 lb unsalted butter,melted
1 lb filo pastry sheets

Drain spinach in a colander, Use paper towel to blot spinach until dry. In a large mixing bowl, add spinach, green onions, crumbled feta cheese, cottage cheese, grated Romano or Parmesan cheese, cream cheese, mint, parsley, dill, & salt & pepper to taste. Mix together until blended, use hands or large spoon. Chill the mixture for 1 hour.

In a greased 10 x 15 pan, place eight pastry sheets, spreading each with melted butter.

Spread spinach mixture evenly over pastry sheets. Cover with rest of pastry sheets, making sure to spread each sheet with melted butter. With sharp knife, score the top of the pastry sheets to make it easier to serve.

Preheat oven to 375 degrees. Place tray on bottom rack and cook for 15 minutes. Then, reduce heat to 350 degrees and place tray on middle or top rack to bake for another 45 - 50 minutes until golden brown. Allow to cool, then cut into squares. Enjoy!
