Sweet Lorraine's Passionate Mousse

Ingredients:
1 tbsp of unflavored gelatin with 3 tbsp water
3 chilled egg whites
1 14 oz. can of sweetened condensed milk
7 oz. passion fruit puree
1 cup chilled heaving whipping cream

Sprinkle gelatin over water. Stir to combine and let bloom. Beat egg whites until stiff and set aside. Combine condensed milk with passion fruit puree. Lightly warm gelatin until it becomes liquid. Let cool. Combine liquid with condensed milk and puree. Fold in whipped egg whites to whipping cream until stiff. Fold whipped cream mixture into condensed milk mixture. Refrigerate for a minimum of 6 hours until firm.
