(WJBK) - Get this recipe courtesy of Maria's Comida in Hamtramck. This recipe is for a two layer cake.
Cake Batter:
12 extra large eggs
1 cup sugar separated (4oz each)
2 cups all purpose flour
Procedure:
Preheat oven to 375 degrees
Separate Eggs - in mixing bowl place whites only
Add 1/2 cup sugar
Mix on high speed until stiff peaks form
In separate bowl, add yolks and 1/2 cup sugar and blend together by hand
Fold egg whites into egg yolks
Add 2 cups all purpose flour, mix well
Spray two pans (either 2 - 9" square or 2 - 2" high round pans) with baking spray
Pour batter evenly into the two greased pans
Bake at 375 degrees for 16 minutes
Insert toothpick in middle - if clean, cake is fully baked
Let cakes cool in pans
Three Milk Mix:
28oz sweetened condensed milk
2 cups heavy whip
14oz evaporated milk
2oz vanilla extract
Mix ingredients well
Procedure:
When cakes are cool, loosen the pans (keep cakes in pans)
Perforate cakes with fork (this will allow the milk mixture to soak in the cakes)
Pour 1/2 of the milk mixture over each cake
Let soak for 30 minutes
Whipped Cream:
2 1/2 cups heavy whip
4 tbs sugar
2 oz vanilla extract
Procedure:
In chilled mixing bowl, place heavy whip, sugar and vanilla extract
Whip on high speed until stiff peaks
Remove one cake from cake pan and transfer to cake platter. Spread layer of whipped cream on the top of the cake. Place second cake on top and finish placing whipped cream on top and sides of both cakes.
