Barlow's Chipotle Chicken Tostada with Pineapple slaw
1 Rotisserie Chicken
2 cups Barlow's Chipotle BBQ Sauce save ¼ cup for drizzling
3 cups Cheddar Cheese Shredded
8 oz Cream Cheese
2 cups Shredded Cheddar for topping tostada's
1 package - 6 inch Corn tortillas
Pineapple Slaw
1 Package Shredded Cole Slaw Mix
1 Jalapeno Chopped Finely
½ cup cilantro chopped finely
½ cup pineapple diced small
Salt and pepper to taste
Preheat oven 350
Directions
Pull chicken and combine with soften cream cheese, 2 cups cheese and BBQ Sauce. Mix together with hands and set aside.
Heat oil for fryer to 350; Fry corn tortillas on each side for 1-2 minutes or until crispy. Remove from oil and season with salt and pepper.
Combine Cole slaw dressing, jalapeno, cilantro and season with salt and pepper. Set aside
Place ½ cup BBQ chicken mixture on top of each crispy corn tortilla, top with shredded cheddar and place in oven to melt. 5-10 minutes
Remove from oven top with Cole slaw and drizzle with BBQ sauce
Chocolate Stout Cupcake with Stout Caramel Buttercream and Crushed Salted Pretzels
Cupcake Ingredients
1 ½ cup Arbor Brewing Company Stout
4 ounces unsalted butter
¾ cup Dutch-Processed cocoa powder
2 cups dark brown sugar
¾ cup sour cream
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 ½ teaspoons baking soda
Directions
Preheat oven to 325degrees F. Line a cupcake or muffin pan with 24 regular-size cupcake liners.
Place the stout and butter in a medium sauce pan and whisk together on medium heat until the butter is melted. Remove from heat.
Sift the cocoa powder into a large bowl and add the sugar. Slowly whisk the stout mixture into the cocoa mixture.
In a small bowl combine the sour cream, eggs, and vanilla and lightly whisk until smooth. Add this mixture to the cocoa mixture.
Sift the flour and baking soda together in another small bowl and add to the cocoa mixture, mixing a final time until the color is even.
Fill the cupcake liners three-quarters full with batter and bake until the cakes spring back after touching, about 27 minutes. Cool the cupcakes in their pan for 5 minutes before transferring to a cooling rack.
Stout Caramel
1 cup stout
2 cups sugar
1 cup heavy cream
Combine stout and sugar in medium sauce pan over low heat. Dunk a pastry brush into a small bowl of water and then brush down the inside of the sauce pan without touching caramel. ( you want to remove any sugar granules that are on the side of the pan)
Cook stout and sugar for 15 minutes. Add heavy cream and allow to cool.
Stout Caramel Buttercream
2 large egg whites
½ cup sugar
½ teaspoon vanilla extract
1 ½ cup butter soften
Caramel to taste
Place egg whites and sugar in mixer bowl stir to combine. Place mixing bowl over simmering water and stir until sugar is dissolved.
Remove from heat and place bowl on mixing stand.
Beat until it becomes white and double in size. Add vanilla.
The add butter on piece at a time whip until each piece is incorporated. Whip buttercream for 10-15 minutes until light and fluffy.
Add caramel to taste.
Frost cupcakes and top with crushed pretzels.
Joe's Sloppy Joes
2 pounds Ground Beef
1 cup ketchup
1 red bell pepper diced small
1 green pepper diced small
½ Spanish onion diced
¼ cup yellow mustard
¾ cup light brown sugar
2 tablespoons Worcestershire sauce
¼ cup oil
Salt and pepper to taste
Place oil in sauté pan and heat over medium heat.
Add onions and peppers. Cook until soft. Add ground beef and cook until meat is completely brown.
Add ketchup, mustard, Worcestershire sauce, and brown sugar.
Cook for 15 minutes
Season with salt and pepper.
