Holiday entertaining can be easy and delicious – and smart. Try this tasty, eye catching idea for your holiday appetizer spread! It’s easy to make, includes fruits and veggies, and has less than 25 calories per serving in the shrimp salad! The fresh taste of this is a refreshing break for the tastebuds amongst the heavier holiday foods – so be sure to give this one a try this year!
 

Shrimp Canapés

Prep Time: 15 minutes
Bake Time: n/a
Amount: 10 servings

Ingredients:

2 cups frozen salad shrimp, thawed
1/2 cup diced pineapple
1/2 cup diced Farm Stand® red onion
1/4 cup diced yellow bell pepper
1/4 cup diced mango
1 jalapeño, seeded and diced
3 tablespoons chopped cilantro
- juice of 1/2 lime
- multigrain entertainment crackers
- whipped cream cheese
1 medium cucumber, thinly sliced

Directions:

1. In small bowl, combine shrimp, pineapple, onion, pepper, mango, jalapeño, cilantro and lime juice. Salt and pepper to taste. Set aside.
2. Spread crackers with cream cheese. Top with cucumber slices and shrimp salad.
3. Serve immediately.
