4 medium zucchini
1/3 cup crumbled feta cheese
2 eggs, lightly beaten
4 scallions, chopped
¼ cup breadcrumbs
1 clove of garlic, minced
1/3 cup fresh parsley, chopped
2 Tbsp fresh mint, chopped
Salt and pepper
Olive oil for frying
Grate zucchini using coarse grater, sprinkle with salt and leave for about 20 min.
In a large bowl, mix together feta cheese, eggs, scallions, breadcrumbs, garlic, parsley and mint.
Squeeze out the excess liquid out of zucchini and add it to the batter. Season with salt and pepper. Mix all ingredients well.
Heat oil in a large pan and drop about ¼ cup of batter for 1 pancake. Fry about 4 minutes on each side on low/medium heat.
Serve with tzatziki sauce. Recipe follows.

1 small clove of garlic, minced
¼ long cucumber, grated
1 tsp. lemon juice
1 Tbsp. olive oil
Pinch of salt
Combine all the ingredients and serve. Chill if making in advance.
