One of summer's perfect pairings – tomatoes and cucumbers! So pretty to look at, and refreshing to eat. This version adds a bit of heat with the chile, so the flavor is high but the calories are contained – 105 calories for one serving. Filling up on veggies like this won't fill you out!

Ingredients:
4-5 medium tomatoes, chopped
1 medium cucumber, seeded and chopped
1 medium yellow onion, chopped
1 Serrano chile, seeded and finely minced
¼ cup Vegetable Oil
¼ cup White Vinegar
¼ cup Granulated Sugar
1 teaspoon Salt
¼ teaspoon Ground Black Pepper
Directions:
1. In large bowl with cover, combine tomatoes, cucumbers, onion and Serrano chile; set aside.
2. In small bowl, combine oil, vinegar, sugar, salt and pepper. Pour over tomato and cucumber mixture; stir to coat.
3. Cover tightly and refrigerate several hours or overnight, stirring occasionally. Serve with slotted spoon.
