french silk chocolate mousse
one quart whipping cream
6 oz of semi sweet chocolate
6 oz of sugar
the day before, heat the whipping cream to simmering, then add the chocolate and the sugar, and stir with a wooden spoon til the chocolate is completely melting.
drain the mix to make sure there are no lumps of chocolate, then refrigerate over night.
The next day, whip with mixer for a soft peak, do not over beat or over whip and serve chilled
