Chef Josh Marks 'Masterchef' recipe: Molten Lava Cake with Raspberry Coulis

"Masterchef" runner-up Joshua Marks may not have won the competition, but Chef Josh made a definite winner on Good Day Chicago Monday morning. Here's the recipe:

White Chocolate Molten Lava Cake or Pudding Cake w/ Raspberry Coulis

  • 6 oz of White Chocolate
  • 6 oz Butter
  • 3 eggs
  • 1/2c sugar
  • 1/3c flour
  • 1 vanilla bean split
  • 1 ts cinnamon

Raspberry Coulis

  • 1 pint of raspberries
  • 1/2 lemon
  • pinch sugar

Melt chocolate over double boiler and add butter.

In medium bowl whisk eggs with cinnamon, vanilla, and sugar.

Temper egg mixture with butter/chocolate mixture. Then whisk in flour.

Pour into 4 - 6 oz ramekins and bake at 350F for 11 mins.

Macerate raspberries in lemon juice and sugar for 5 minutes. Then roast in oven on 350F for 5 minutes. Puree in blender and run thru a fine mesh strainer to get the seeds out.

Serve with chocolate cake with drizzle of raspberry coulis.
