Edamame & Spinach Dip

Spinach dip is a favorite at parties any time of year!  Try out twist on it with the addition of edamame.  This is a fun and smart way to add veggies to your buffet - and by using a mix of traditional and better for you ingredients, this is a treat you can feel good about serving guests - and bonus - it's ready in just minutes for stress-free entertaining

 

Active Time:   15 minutes

Total Time:  15

Amount:   4 cups

  

Ingredients:

1½ cups Jewel® Frozen Shelled Edamame, thawed

1 (10 ounce) box Jewel Frozen Chopped Spinach, thawed, well drained

1 cup Jewel Light Sour Cream

1 cup plain Greek yogurt

½ cup chopped green onions

1 (1.4 ounce) packet dry vegetable soup mix

⅛–¼ teaspoon cayenne pepper

pita chips

 

Directions:

1.  Place edamame in food processor or blender; process until finely chopped.  Add spinach; continue processing until well combined.  Transfer to large bowl.

2.  Add sour cream, yogurt, onions, soup mix and cayenne.  Mix until well combined; salt and pepper to taste.

3.  Serve with pita chips.
