CHICAGO (FOX 32 News) -

Creamy Peach Breakfast Quinoa

Start the day out right with a balanced breakfast!  This idea is a quick balanced meal that provides multiple food groups with a fruit built right in.  If you like oatmeal and other hot cereals, be sure to give this a try!

Active Time:  10 minutes

Total Time:  25 minutes

Amount: 4 servings

  

Ingredients:

2 cups unsweetened vanilla flavored almond drink

1 (16 ounce) package Essential Everyday Frozen Peaches, chopped

¼ teaspoon Essential Everyday Ground Cinnamon

¼ teaspoon Essential Everyday Salt

1 cup quinoa, rinsed

vanilla flavored Greek yogurt, optional

 

Directions:

  1. In medium saucepan, combine almond drink, peaches, cinnamon and salt; bring to a boil. 
  2. Add quinoa and return to a boil.  Reduce heat to low; cover and simmer 15-20 minutes or until liquid has been absorbed, stirring occasionally.
  3. Serve with a dollop of yogurt, if desired.
