Made in Michigan: Al Dente Pasta

SOUTHFIELD, Mich. (WJBK) -- If you can't make pasta at home, the next best thing just may be pasta made by a longtime Michigan-made company.

Al Dente Pasta has been based in Whitmore Lake for over 30 years. On Tuesday, owner Monique Deschaine stopped by 'The Nine' to show off her recipe for Pasta with Tuna (or Salmon), Spinach and Capers.

Ingredients:
1 bag Al Dente® Pasta
3 Tbs. extra virgin olive oil
1 clove of garlic, minced
5 oz. fresh spinach (or arugula)
6 oz. Wild Caught Alaskan Sockeye Salmon or Tuna
2 tsp. capers
1/3 cup Parmesan, freshly grated
lemon zest and juice of one lemon
1/2 tsp. kosher salt*, not including the salt used for the pasta cooking water

Bring a pot of salted water to a boil then add the pasta. In the meantime, put the oil and garlic in a large skillet over low heat. Flake in the fish, heating gently. Sprinkle with 1/2 tsp salt.  Add the capers and spinach. Before draining pasta, ladle approximately 2/3 cup pasta cooking water to skillet over the spinach.  Drain the pasta and add it directly into the skillet. Toss to wilt the spinach.  Grate lemon zest over pasta then squeeze the lemon juice and stir. Add Parmesan cheese, salt and pepper to taste. Enjoy!

*measurement based on Morton's Coarse Kosher Salt.
