Gloria Santillana, the Mexican Mama, shared the secret to homemade salsa in as little as 15 minutes (roasting), and brought her take on an Irish shandy – in honor of St. Patrick's Day!
Salsa de Chipotle
Place garlic, chipotle chiles, and tomatoes on a 'comal' or in a skillet. Do not add oil! Place on stovetop. Keep on heat until tomatoes and chiles 'blister.'
Remove all items from heat and let cool.
Remove peel from garlic and stems from chile and place all items in a blender and half cup of water and blend.
Add course salt or seasoning salt.
This is a super smokey, sexy salsa!
Mexican Mama Shandy
Fill a highball glass with ice. Fill half way with carbonated soda (pineapple, lemon-lime, orange, or black-currant). Fill the rest of the glass with beer of your choice.
Squeeze a dash of fresh lime and stir.
