Chef Paul's low carb cauliflower pizza crust

(WJBK) -- Cauliflower makes a surprisingly good pizza crust. Give it a try. I know you don't believe me. Less than 20 grams of Carbs for the crust and about 8 – 10 grams of fiber and nearly 300 percent of RDA of Vitamin C. That's more than an orange.

At only 130 calories for ¼ of the whole crust – it leaves a lot of room for toppings. I could just eat the crust with some marinara sauce.

Servings: makes a 12-inch large pizza

Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes

Ingredients
• 1 medium head cauliflower, cut into florets – remove the thick heavy stems and save for another dish
• 1 egg
• ¼  cup mozzarella plus ¼ cup of parmesan cheese, shredded (can use nondairy if preferred)
• 1 teaspoon oregano or Italian seasoning blend
• ¼ cup of Quinoa flour or garbanzo flour – (any sort of non-gluten flour)
• salt and pepper to taste

Toppings
• 3/4 cup mozzarella, shredded – I prefer Lo fat – not no fat but could use nondairy for both.
• red onion to taste, thinly sliced
• any assorted roasted vegetable like red peppers
• ¼ cup of good marinara sauce (optional)
• Spinach, wilted or chopped fresh.
• fresh cilantro to taste

Directions
1. Rinse the cauliflower head and drain. Trim the florets off and any extra heavy stems.
2. Rice the cauliflower in a food processor, place it in a microwave safe dish and microwave for about 8-10 minutes or until cooked. Let cool a little.
3. Place the cauliflower in a tea towel and squeeze as much moisture out as you can.  VERY IMPORTANT STEP otherwise the crust will not firm up well.
4. Mix the cauliflower, egg, cheeses, quinoa flour, oregano, salt and pepper well and press the mixture onto a baking mat or parchment paper lined baking sheet.
5. Tip - make the center a bit thinner than the edges as it tends to not bake as well or stiffen up like the thinner edges.
6. Bake in a preheated 450F oven until lightly golden brown, about 15-20 minutes.
7. Add the very thin smear of sauce and lots of toppings as desired and bake until the cheese is bubbling, about 10-15 minutes.
