Student Chefs Ramp Up The LAUSD Menu

The first day of school is coming up fast for L.A. Unified School students, and there's a big change coming this year: some of the food in cafeteria will be made with recipes created by the students.

Guadalupe Gonzalez and Jose Landaverde won a competition last semester when they had to come up with healthy recipes, and now their meals will be served in all 800 schools in the district.

Here are the recipes they're showing on Good Day LA:

Guadalupe's breakfast fruit puff

  • 2 eggs
  • ¼ cup whole wheat flour
  • ¼ cup 2% lowfat milk
  • 1 tbsp cooking oil
  • ¼ tsp salt
  • 2 cups fresh fruit - kiwi, strawberries, peaches, mango, mandarin oranges, bananas or a combination
  • 2 tbsp jam, warmed, any flavor

Preheat oven to 400 ̊F. Lightly coat four remekin dishes or 4-inch foil tart pans. Set aside. In a large bowl, whisk together all ingredients, but the fruit, until smooth. Divide batter among the prepared pans. Bake for 20-25 minutes, or until brown and puffy. Turn off oven and let stand in oven for 5 minutes. Remove from oven. Immediately transfer to serving bowls. Spoon fruit into the center of the each pancake. Drizzle fruit with warmed jam.

 

Jose's Cucumber Salad

  • Serving size: 4
  • 2 cups sliced cucumber
  • 2 cups diced tomato
  • For Dressing:
  • 4 tsp vinegar
  • 8 tsp canola oil
  • 2 tsp honey
  • 2 tsp mustard
  • 1 tsp italian seasoning mix

Mix all the dressing ingredients together in a small bowl using a whisk. Slice you cucumber and dice your tomatoes. Toss all ingredients together and plate.

LAUSD tells us they serves 650,000 meals daily with no artificial flavors, colors, no added Trans fats, with low sugar and salt content to meet USDA standards and  about 80 percent of the students at LAUSD qualify for free and reduced-priced meals.
