Healthy tailgating tips from Marie Spano

Before you plan your next Heisman-worthy tailgate menu, chew on this: You could probably stand to lighten it up a bit.  How?  We asked sports dietician coach Marie Spano for some tips how to serve up healthy snacks and drinks your guests will love.


Marie's tips:

First off, chicken wings, because a tailgate just isn't the same without them. But you can make healthier Gourmet Wings that your guests you will definitely want to Rise Up for. The secret is in the seasoning and hot sauce. I used refrigerated, not frozen, wings, seasoned them with a balanced blend of all natural spices that add flavor without overpowering the natural flavors of the fresh wings and threw them on the grill. As they cook some of the fat will drip off. Once they are golden brown I removed them from the heat and coated them with a hot sauce that contains real fresh from the farm ingredients – the same ones you would use if you were to make your own sauce.
What's the perfect side dish to wings?
This simple salsa made with black beans, tomatoes, white corn and feta. I added a zesty dressing made from fresh lime juice, garlic and spices. {Recipe prep on air}
Another fantastic, eye-appealing dish – grilled vegetable pasta salad. In addition to providing a serving of vegetables, the carbohydrates in wheat foods, like pasta, provide fiber and the energy you need to keep you going throughout this busy, active day. We need six servings of grains each day, and half of those should be from whole grains.
For dessert, you could whip up brownies but they are boring and empty calories. Tasty calories but empty calories. So make fruit a little more fun and exciting – kabobs in your team colors along with a fruit dip made from light cream cheese and marshmallows and one of my standbys – strawberry footballs.
Rise Up! Wings
5 lbs of fresh chicken wings
3 tbsp of your favorite seasoning or rub (I used Schultz's Gourmet Premium Seasoning & Rub)
10-12 oz of your favorite hot sauce (I used Schultz's Gourmet Hot Sauce)
Turn one side of grill on medium heat. Sprinkle seasoning on fresh wings and place them on the side of the grill with the heat on. Constantly rotate the wings and bring them over to the non-heated side of the grill and close the grill lid so they are cooking but not in direct heat. Continue to rotate until they are cooked throughout and golden brown, approximately 25-30 minutes. Heat your favorite hot sauce in a pan on the stovetop on low heat. Once hot move the wings directly from the grill to the saucepan and coat them thoroughly. Serve and enjoy!
Falcons Salsa
1 can black beans, drained and rinsed
2 fresh tomatoes, chopped
red onion, chopped
1 cup sweet white corn
4 – 8 oz. crumbled feta cheese
1 clove garlic, minced
1/4 cup fresh lime juice
1 tsp mustard
1Ž4 tsp black pepper
sea salt
1/3 cup olive oil
Place all salsa ingredients (except dressing) in a large bowl and mix thoroughly. In a separate small bowl whisk together garlic, lime juice, mustard, salt and pepper. Slowly mix in oil and drizzle dressing over the salad and mix throughout. Mix in feta. Refrigerate for several hours or overnight before serving
Chocolate Strawberries
Light brown chocolate melts (sold at Wal-Mart or Michael's Arts & Crafts)
White chocolate melts
Parchment paper
Icing bag or Ziploc bag
Rinse strawberries and pat dry with paper towels (until completely dry). Melt chocolate dips carefully according to directions while checking frequently (if overheated they will not work as well). When melted stir gently (do not over stir or they will clump). Dip strawberries in melted chocolate and place them on parchment paper. Once finished dipping all strawberries, cut a small hole in icing bag or Ziploc bag (the diameter should be just wide enough for lines piped on the strawberries). Heat white chocolate melts according to the same directions as used for the brown chocolate melts. When melted pour into the icing bag and pipe lines on the strawberries.
Fruit Kabobs

lemons or lemon juice
Fruit Dip
1 8 oz container of cream cheese (room temperature)
1 cup marshmallow creme
2 Tbsp orange juice
1Ž2 - 1 cup drained crushed pineapple
Combine all ingredients into a medium size bowl – mix or beat on low with an electric mixer.
