LAUSD Students Are 'Cooking Up Change' For Better Health

Cooking up Change is a national healthy cooking competition launched by Healthy Schools Campaign. It challenges teams of high school culinary students to create menu items that are not only healthy, but also meet nutrition guidelines and the budgetary constraints (about $1 per meal) that school food services programs across the country face today.

The culinary teams followed a rigorous recipe development process with a limited list of ingredients to create dishes that are low in calories, fat, sugar and sodium. The District's Food Services dietitians carefully checked each recipe to meet nutritional requirements.

There is a District competition, which will be held in Los Angeles on Jan. 30 and whichever school wins the District competition will move on to national competition in Washington, DC at the US Department of Education on June 9, 2014.

At the national competition in Washington, DC, LAUSD will compete against other culinary program from Chicago, Houston, Orange County, Calif., Orlando, Fla., Jacksonville, Fla., Winston-Salem, N.C., Memphis, Tenn., Wichita, Kan. and Little Rock, Ark.

The Los Angeles Cooking up Change competition was sponsored by LAUSD's "I'M IN" campaign, an all-inclusive program designed to raise awareness about the District's healthy meals to help fight off childhood obesity, as well as to encourage student attendance and dropout prevention.

Main dish: Open Philly steak and cheese sandwich on a flatbread
4oz Philly steak meat
2oz cheese sauce
2 teaspoons Worcestershire sauce
¼ cup bell peppers
¼ cup onions
1 flat bread

1.    Warm cheese sauce and set aside
2.    Add Worcestershire sauce to meat and sauté set aside
3.    Sauté onions and bell peppers (adding a tablespoon of water as needed to prevent burning) when tender add the meat and toss well
4.    Toast flat bread
5.    Top the flatbead with meat mixture and pour warm cheese sauce on top

Side dish 1: Mixed salad with honey mustard dressing
1 cup Romaine lettuce
½ Carrot
½ Tomato
2 tablespoons Shredded red cabbage

Dressing;
½ teaspoon Honey
½ teaspoon Mustard
2 teaspoons Oil
½  teaspoon Vinegar
½ teaspoon Lime
Italian dressing

1.    Mix all dressing ingredients with a whisk and set aside
2.    Shred romaine lettuce
3.    Shave carrot with a peeler
4.    Dice tomato
5.    Toss all ingredients together adding shredded cabbage
6.    Drizzle with dressing

Side dish 2: Sweet potato and pineapple express
4oz sweet potato
½ cup pineapple chunks
¼ teaspoon Honey
1/16 teaspoon (pinch) brown sugar

1.    Peel and dice sweet potatoes
2.    Place in the microwave for 5-10 minutes
3.    Place potatoes and pineapple in a skillet to camelize. Drizzle honey  and sprinkle brown sugar and serve.
