Seva's quinoa spinach salad

Make a reservation to help save lives April 24.
Dining Out for Life®, the international event, which raises funds for local HIV/AIDS service organizations, will take place at Detroit-area restaurants Thursday, April 24, 2014.
Proceeds will benefit the Michigan AIDS Coalition in Ferndale.

Seva’s Quinoa-Spinach Salad

Yield = 8 servings

Prep Quinoa

Bring to a boil in a small saucepan:
2 cups of water
6 oz quinoa

Reduce heat to simmer, cover, and cook until all of the water is absorbed (about 15 minutes).  
Set aside.

Prep Dressing

Whisk together:    

3 T red wine vinegar
2 tsp dijon mustard
2 cloves garlic, minced
½ tsp pepper
1 ½ tsp salt

Whisk in slowly:

½ c extra-virgin olive oil
Set aside.

Assemble Salad


Mix together:    
Cooked quinoa
½ seedless cucumber, diced finely (all finely diced = ¼”)
½ yellow pepper, diced finely
1 medium carrot, peeled and diced finely
2 stalks celery, diced finely
3-4 large radishes, diced finely
1 oz basil, cut into "chiffonade" strips
¼ c pitted Calamata olives, chopped up a little
            

Then, toss with:
8 oz baby spinach
