(WJBK) - Celebrate Cinco de Mayo with some out-of-the-box tacos. The experts from Jacques' Tacos truck offers up some inspiration for creative tacos.

TACOS DE CAMARONES (shrimp tacos)
Saute minced garlic in olive oil and butter in a skillet
Add raw shrimp to skillet and dust with Cayenne pepper and smoked paprika
Saute until shrimp are pink in color
Place shrimp in a good quality corn or flour tortilla that has been lightly grilled on a dry or lightly oiled skillet. Top with a mixture of shredded cabbage and chopped fresh cilantro that has been tossed in a mixture of fresh lime juice, vegetable oil and salt. Add some thinly sliced avocado, then pico de gallo or your favorite salsa.
(Thinly sliced chicken breast can be substituted for the shrimp.)

VEGETARIAN TACO

Saute sweet potato cubes tossed with onions and garlic (and chopped chiles if more spice desired) in oil and seasoned with cumin. Add heated canned black beans. Place in a warmed tortilla and top with cotija cheese or queso blanco (Mexican white cheeses) and chopped cilantro. Add chipotle sauce or your favorite salsa.

Many combinations of proteins, fresh vegetables, spices and salsas can be used. Cheese is optional, but not frequently used in Mexico. A good quality tortilla from a Mexican bakery or market makes the most delicious tacos.
