(WJBK) - Bad Brad's BBQ Cucumber Salad

Ingredients:
32 oz. Gal. Seasoned Rice Wine Vinegar
12 oz. Sugar
½ c. Ginger, peeled, rough chop ginger
½ oz Fresh mint
1 T. Salt
10 English Cucumbers (Cut thin slices)
2 Red Peppers (Cut into thin strips)
1 Red Onion ( Cut into thin strips)

Method:
Place vinegar, sugar, ginger, mint and salt in a stock pot, bring to a boil and allow to steep. Cool, then strain out mint and ginger. Once seasoned vinegar is cooled, pour over cut cucumbers, onions and red peppers and allow to marinate for one hour. Then enjoy.

Smoked BBQ Pit Beans

Ingredients:
2 Small cans White Cannellini Beans
1 Small can Red Kidney Beans
1 Small can Black Beans
24 oz. Sweet BBQ Sauce
2 T. Yellow Mustard
½ c. Brown Sugar
6 oz. Water
3 oz Apple Cider Vinegar
1 Small Yellow Onion (small dice)
2 T Garlic Minced
2 Slices Bacon
6 oz. Leftover Rib meat, chopped

Method:
Open cans of beans and drain into a colander and rinsed well, set-aside.
Using a saucepot, start rendering bacon until slightly cooked. Add the onions and garlic and cook until caramelized. Now add the water, scraping off the bits from the bottom of the pan. Now add the BBQ sauce, mustard, vinegar and brown sugar,. Bring to a boil and stir using a whisk to bring everything together. Once the sauce is smooth and hot. It will be a little watery. Place your beans in an ovenproof container and pour your sauce over the beans and stir everything together. Sauce will be just over the top of the beans. Now you can smoke these beans at 250 degrees for 4 hours or until sauce has reduced to your desired thickness using a smoker or using indirect heat with wood chips on the opposite side.
