(WJBK) - Ocean Prime's tuna tartar

Ingredients: 
3 oz. tuna 1/4" dice
1 tbs. tuna tartar marinade
kosher salt 
1/4 cup avocado mix 
1 oz. wonton strips, fried, crushed 1/4" thick julienne
1 oz. ginger ponzu
1 tbs. pickled ginger
1 tbs. sour cream
 1/2 tsp white sesame seeds, toasted
 1 tsp scallions, sliced

Method: 
toss tuna with marinade and season with kosher salt
place avocado mix into a 3' ring mold set in the center of a soup bowl
place wontons into mold on top of avocado mixture 
place tuna mixture into mold.
lightly pack down tuna and remove ring mold
pour ginger ponzu around timbale and place wasabi paste in the sauce at 3 o'clock 
place pickled ginger and sour cream side by side on top of timbale
sprinkle entire plate with seeds and scallions


Ocean Prime's wasabi drizzle

makes 1 cup

Ingredients:

5 tsp. wasabi paste
5 tsp. basil oil
1/8 cup mayonnaise
2 1/2 tsp. mirin 
kosher salt

Method:

Mix wasabi paste and oil until smooth
add mayo then mirin and mix until smooth
add salt to taste
label date refrigerate

Here’s your chance to experience three of Troy’s finest all in one evening-The Capital Grille, Ocean Prime and McCormick & Schmick’s Seafood & Steaks. Restaurants will provide a sampling of tasty hors d’oeuvres and a cash bar. Attendees will be assigned a starting restaurant and will then be on their own to experience all three.
General admission is $25 per person.

A VIP Reception is also available, 5-5:30 p.m., at Ocean Prime. The reception will include cocktail tasting and is limited to the first 7 groups of four registrants. VIP tickets, which include the main event, are $140 per party of four.
