Greek-Style Summer Salad with Tzatziki Dressing
Makes 4 servings

For the dressing:
7 ounces plain whole-milk Greek yogurt
½ of an unpeeled English cucumber, seeds scooped out and discarded, minced
1 garlic clove, minced
1 tablespoon dried dill
Juice of ¼ lemon
Sea salt to taste

For the salad:
¼ of a red onion, thinly sliced
2 medium beets, peeled and cut into ½” cubes
15 ounces chickpeas, drained
Pitted olives of your choice, chopped
Your choice of lettuce (Romaine, mesclun, red/green leaf, etc.), chopped if necessary
Feta cheese for topping, preferably feta made with sheep or goat milk (for a more authentic taste)

To make the dressing, whisk the ingredients together in a medium bowl.

To make the salad, place the red onion slices in a bowl of cool water. Let soak. Fill a medium pot halfway with water and bring to a boil. Add the beets and reduce heat to medium, then simmer beets for 8 to 10 minutes or until tender. Drain well.

In a large mixing bowl, toss beets with the chickpeas, olives, lettuce, and feta. Drain red onion and pat dry before tossing them into the salad. (Soaking them mellows their bite.) Add as much dressing as you’d like and toss well to combine, thinning with more lemon juice or a splash of water if need be. Serve promptly.

Leftover dressing can be refrigerated for 5 days and used as marinade, dip, condiment, or whatever else you like.

Cherry Frozen Yogurt or Cherry-Yogurt Smoothies
Makes about 5 cups frozen yogurt/smoothies

17.6 ounces plain whole-milk Greek yogurt
¾ cup whole milk, preferably from grass-fed cows
16 ounces frozen cherries, thawed and drained
½ cup maple syrup

To make frozen yogurt, place the yogurt in a fine-meshed colander and place the colander inside of a large bowl. Let drain 6 hours or overnight in the fridge. Transfer to a blender, add remaining ingredients, and blend well. Freeze in an ice cream maker according to manufacturer instructions.

To make smoothies, simply blend all ingredients. (For a single-serving smoothie, use 7 ounces of yogurt, ¼ cup milk, about 5 ounces of fruit, and 1 or 2 tablespoons of maple syrup.)
