HAP's healthy back to school recipes

Health Alliance Plan Chef Evelyn Stokes talks about some easy, quick, and very nutritious breakfast ideas for back to school.

HAP offers a web-based cooking program to the community called Cook eKitchen.

Recipes are updated quarterly, with new recipes from Baldwin Publishing. There are healthy recipes for everything from smoothies to cookies, breakfasts to main courses, snacks to desserts and everything in between. The program was launched to help families combat childhood obesity with sensible advice following the 5-2-1-0- plan: eat 5 fruits and vegetables a day, limit screen time to two hours or less, get one or more hours of activity a day - and have zero sugary drinks.
 
Breakfast Burrito Recipe

This egg and cheese burrito is only 225 calories, but it will fill you up. Roll up this breakfast burrito in minutes, and you're ready to go. This simple egg recipe is a great start to the day.
 
Ingredients
       
6 egg whites
2 Tbs grated reduced-fat cheddar cheese
2 whole wheat tortillas (8-inch)
1/2 avocado, peeled and diced
2 Tbs salsa
       
Preparation
       
In a bowl, mix egg whites and cheese until combined.
Lightly coat a microwave-safe bowl with nonstick cooking spray.
Pour egg mixture into bowl and microwave on high for 2 to 2 1/2 minutes.
Spoon out egg and place half in each tortilla.
Top with avocado and salsa and roll up.

Yield: 2 servings
 
 
 
Mixed Berry Smoothie Recipe

This energizing smoothie is bursting with berries. You can use frozen berries too; just make sure they are not packed in sugary syrup
 
Ingredients
       
1/2 cup blueberries
1/2 cup strawberries
1/2 cup raspberries
1/2 cup blackberries
1 frozen medium banana, sliced
6 oz fat free vanilla yogurt
1 cup skim milk
1 cup ice cubes
2 Tbs honey
       
Preparation
       
In a blender, place all ingredients and blend until smooth.

Yield: 4 (1-cup) servings
